Strawberry Rhubarb Pie

Strawberry Rhubarb pie offers a twist on both a strawberry pie and a rhubarb pie. If you are a dedicated rhubarb-only aficionado, you may be disappointed with this recipe. However, I would strongly encourage you to give this recipe a whirl. Combining the two fruits creates a distinctive taste that does not necessarily favor one flavor over the other. Of all the recipes that I have reviewed, I like this recipe because of the addition of spices and the use of tapioca as a thickener, which produces a glossy red sheen in the filling.

This recipe smashes together two kinds of fruit with individually bold tastes into a uniquely flavored pie. The combination of strawberries and rhubarb creates a distinctive taste that balances the tartness of rhubarb with the sweetness of strawberries.

Ingredients
  

Crust

  • 1 nine inch double crust

Filling

  • 2 1/2 cups strawberries, sliced into pieces
  • 2 1/2 cups rhubarb chopped into 1/2 inch pieces
  • 1 cup sugar
  • 3 tbsp minute tapioca
  • 1 tbsp flour
  • 1/2 tsp lemon zest
  • 1/2 tsp lemon juice
  • 1 tsp vanilla
  • 3 tbsp salted butter
  • 3 tbsp milk
  • 1 or 2 tsp sparkling sugar

Instructions
 

  • Prepare oven at 425 degrees.
  • Prepare double-crust recipe, Roll out 2/3 of crust recipe and cover bottom of pie dish. Reserve remaining dough for top crust.
  • Mix rhubarb, strawberries, sugar, tapioca, flour, lemon zest and juice, cinnamon, and vanilla together in a a large bowl.
  • Pour into prepared crust.
  • Dot filling with butter.
  • Roll out remaining dough for a single top crust or cut into strips for a lattice crust.
  • Place top crust on filling and crimp to seal edges.
  • Brush milk on top crust and sprinkle with sparkling sugar.
  • Place pie in oven and bake at 425 degrees for 15 minutes and then reduce oven temperature to375 degrees.
  • Bake for an additional 45 minutes or until filling is bubbling and crust is a golden brown.
