Crimp My Pie

You have a masterpiece at hand. The dough feels perfect, it rolled out perfectly, it plated perfectly. You are now ready to pour in the filling. Whoa, wait a minute, what about the edges. It surely does not make the pie taste any better when you crimp or flute the edge, but it sure presents better. Take the time to crimp up your pie. It’s not hard, really.

Instructions

  • Fill your pie shell with the bottom crust.
  • Tuck the outside crust dough into the plate. Don't try to make the edge perfect yet. It's Ok if the crust edge looks uneven. We will shape it up in the next step.
  • Using thumb and forefinger roll and pinch the dough of that it stands about thump high. and about an 1/8th of inch think.
  • Ensure that the top of the edge is rolled over.
  • Using thumb and knuckle on your left hand, form a V. (If you your left handed, reverse hands
  • Use the knuckle of your right hand to push the dough in the V of your left hand
  • Continue around the edge of the pie until top is completely crimped.
  • A good looking crust

Notes

It is helpful to dust the forefinger that you are using to create to push the dough into the V. Think of the dough as clay, meaning repair cracks or other imperfections by appropriately molding the crimp.
